RECEIVING AND INSPECTION OF RAW MATERIALS AND SUPPLIES:
Upon arriving raw materials and inputs, they are inspected for quality conditions as odor, color, texture, ° Brix, packaging, weight and labeling is done.
Guava is subjected to a washing process with jet water and disinfection by immersion in the tank, leaving as contact time between 2 and 5 minutes.
The previously washed and disinfected guava is subjected to a blanching process, between 10 and 30 minutes.
After having cooked guava in the scalding tank, this is taken to the sieve with the help of a bucket of process previously cleaned and disinfected. The sifting process can separate the seed from the pulp, ensuring the quality of the final product.
COOK / MIXING
The mixture of sugar guava pulp is passed to the mixing tank ball concentration, where finally we finish to add the missing ingredients , later there are left cooking / mixing for a period of approximately 1'15 ' ' 1'30 ' ' , after this time has passed when the guava candy has the pH and Brix required is discharged to the settling tank , where operators begin to download the drawers , depending on the reference .
In this process the drawers that were discharged into the cooking area are brought to the setting area, so that the guava candy is in a minimum rest of 3 days to get the texture and / or appearance required. They should remain well covered.
According to the programming package, the Guava candy slices are cut in the cutting machines to give them the size and weight referenced.
Given the labeling scheduling , the responsible person label all packaging material to be used in the day, taking into account each batch of product and the expiration date as the reference
The packing staff meeting the basic standards of BPM , as they are; not talking while performing its activities , not eating in the production plant , use uniform properly, hair up , don't use accessories, short and unpolished nails, among others performs packaging activities taking into account the reference to pack.
STORAGE AND DISTRIBUTION
The product released by weight, labeling features , packaging , sensory and organoleptic is delivered to the warehouse in baskets fulfilling the conditions embalaje..El product is distributed to the market and transported in vehicles suitable for this activity.
